Grilled Pork with Mustard Sauce
Ingredients
4 pork tenderloin filets, 6 - 8 oz. each, cleaned and trimmed
2 tbsp dijon mustard
1 cup cream
2 diced sour gherkins
2 tbsp dijon mustard
1 small diced onion
1 tsp vinegar
1 tsp corn starch dissolved in cold water to thicken sauce
1 tsp sugar, salt and pepper
Directions
1. Marinate meat with a mixture of mustard, salt and pepper.
2. Prepare barbecue grill or grill pan (medium - high heat). Grill until thermometer inserted into thickest part registers 145° F, turning often, about 10 min. Transfer to platter; let rest 10 min.
3. Prepare sauce by heating cream with mustard, gherkins and onions in a pan (where meat was grilled). Cream with mustard, gherkins and onions. Simmer together for 3 min.
4. Add vinegar and sugar and blend well.
5. Thicken sauce with corn starch slurry.
