Autumn Pork Chops
Fall inspired dish combining the great produce of autumn like acorn squash and apples with the hearty warmth of pork.
Ingredients
6 pork loin or rib chops about 1/2" thick
1 medium acorn squash cut into 6 rings and seeded
1 medium onion, sliced
2 medium cooking apples, unpeeled, cut into wedges
2 tbsp honey
2 tbsp margarine or butter
2 tsp chopped fresh oregano or 1/2 tsp dried oregano
1/2 tsp salt
1/8 tsp pepper
2 tbsp water
Directions
1. Heat oven to 375 F.
2. Place squash in ungreased rectangular baking dish, 13" x 9" x 2".
3. Heat 1 tbsp of the margarine or butter in 10" skillet over medium heat until melted. Cook pork, turning once, until brown.
4. Place pork on top of squash and sprinkle with oregano, salt and pepper. Then place onion on pork. Finally top with the apple.
5. Mix honey and water and pour over apples. Dot with remaining 1 tbsp margarine or butter.
6. Cover and bake 50 to 60 min. or until pork is no longer pink in center and squash is tender. Serve pan drippings with pork if desired.
