Chop Suey
Ingredients
1/4 head celery
1 large onion
2 tomatoes
2/3 fresh or dried (reconstituted) mushrooms, sliced
3 tbsp peanut oil
2/3 fresh or dried (reconstituted) mushrooms
3/4 lb boneless skinless chicken breast, thinly sliced
2 cups chicken stock
salt & pepper
1 tsp corn starch
1 tbsp water
1 cup soy sauce
Directions
1. Dice all vegetables and stir fry with sliced mushrooms in wok with oil until softened. Remove vegetables, set aside and keep warm.
2.Season chicken with salt and pepper. Add chicken to the wok and stir fry chicken until cooked through. Remove chicken and keep warm.
3. Add stock to wok and bring to a quick boil. Pour in water blended with soy sauce and corn starch. Let it simmer for a minute as sauce thickens. Add chicken and vegetables back to wok, stir to blend and incorporate flavors. Serve and enjoy.
