Chicken and Tortellini Salad
	 
	Ingredients
	1 pkg (8 oz.) cheese-filled tortellini
	1 1/2 cups cut-up cooked chicken or turkey (about 8 oz.)
	3 cups bite-size pieces of salad greens (spinach, leaf lettuce, romaine, bibb lettuce)
	1 small red or green bell pepper, cut into 1/2" pieces
	1/3 cup dry white wine or low-sodium chicken broth or low-sugar fruit juice of your choice
	2 tbsp olive or vegetable oil
	2 tbsp lemon juice
	1 tbsp chopped fresh tarragon or 1 tsp dried tarragon leaves
	1 tsp sugar
	1/2 tsp salt
	1/4 tsp pepper
	 
	Directions
	1. Cook tortellini as directed on package and drain. Rinse with cold water and drain well.
	2. Mix tortellini and chicken together in a large bowl.
	3. Shake wine (or broth/juice), oil, lemon juice, tarragon, sugar, salt and pepper in tightly-covered container.
	4. Stir into tortellini mixture. Cover and refrigerate at least 2 hours. Toss tortellini mixture with salad greens and bell pepper just before serving.
