Baked Chicken with Herbs
There's a million and half different ways to make chicken. This is a simple and easy way to prepare chicken that will keep it moist and make it uber flavorful. You can sub in fresh herbs if you have them or change the types of herbs to something you prefer instead of the listed ones. Recipes are just guidelines for you to make your own. Breaking down the chicken yourself is a fantastic way to save money.
Ingredients
1 broiler-fryer chicken (2 1/2 lb)
1/4 cup finely-chopped onion
1/4 cup lemon juice
2 tbsp margarine or butter
2 tbsp olive or vegetable oil
2 tbsp Worcestershire sauce
1/2 tsp dried basil leaves
1/4 tsp dried marjoram
1/4 tsp dried oregano
2 large cloves garlic, finely chopped
Directions
1. Cut chicken into pieces. Cut each breast half into halves and remove skin.
2. Heat margarine and oil in rectangular pan 13" x 9" x 2" in 375 F oven until margarine is melted. Stir in the remaining ingredients except the chicken pieces.
3. Place chicken, meat side down, in pan, turning to coat with herb mixture. Cook uncovered 30 min. Turn chicken and cook until thickest pieces are done (165 F when tested with a food thermometer), about 30 min. longer.
