Apple-Stuffed Chicken Breasts
Apples and cinnamon put a twist on a classic method of grilling chicken.
Ingredients
1 lb skinless boneless chicken breast halves (4 breasts)
2 medium tart cooking apples, peeled and cut into thin slices
1 cup apple cider
2 tbsp sugar
1 tbsp corn starch
1/4 tsp ground cinnamon
Directions
1. Prepare a grill and heat coals or gas grill.
2. Place chicken breast halves between 2 pieces of waxed paper. Pound chicken to 1/8" thickness.
3. Mix sugar and cinnamon. Coat apple slices with sugar mixture. Divide apple slices among chicken breast halves. Fold chicken around apples and secure with toothpicks.
4. Cover and grill chicken 4" to 6" from medium heat 20 to 25 min., turning once, until internal temperature reaches 165 F. Remove toothpicks.
5. Mix apple cider and corn starch in 1-quart saucepan. Cook over medium heat, stirring constantly, until thickened and bubbly. Spoon over chicken.
