BBQ Short Ribs
Adding a surprise ingredient of maple syrup to the BBQ sauce kicks in a sweet punch to the short ribs. Be sure to try to use good quality short rib so that they'll turn out the best way possible for you.
Ingredients
4 lb beef short ribs
3/4 cup chopped onion
3/4 cup ketchup
1/2 cup maple syrup
1/3 cup lemon juice
3 tbsp Worcestershire sauce
2 tbsp prepared mustard
1 tbsp vegetable oil
1/4 tsp pepper
1 tsp salt (optional)
Directions
1. Trim any excess fat from the ribs.
2. Place ribs and salt in 4-qt saucepan or Dutch oven. Cover with water. Bring to a boil. Cover and simmer 1 1/2 to 2 hours or until tender.
3. Meanwhile, saute onion in oil until tender. Add remaining ingredients and simmer 15 min. to marry the flavors together.
4. Drain the ribs and place on a rack in a broiler pan or over ash-colored coals on outdoor grill so meat is 6 to 7 inches from heat. Broil for 10 min., turning occasionally.
5. Baste ribs with sauce and continue broiling about 10 min., turning and basting frequently with sauce. Serve with remaining sauce, if desired.
