Orange Cake
Ingredients
1 stick butter, softened
Juice and grated peel of 2 oranges
4 oz chopped almonds
1 cup flour
2 tsp baking powder
1/2 tsp salt
2 egg whites, beaten until foamy
Directions
1. Preheat oven to 375 degrees.
2. Combine butter, orange juice and peel, almonds, flour, baking powder and salt until well-blended. Lightly fold in egg whites until just incorporated.
3. Pour into greased 9" cake pan and bake for 45 min. or until tester in the middle comes out cleanly.
