Red Snapper with Red Wine & Green Pepper Sauce
 
Ingredients
4 fillets of red snapper
2 tbsp butter
 
Sauce:
1 cup red wine
1/2 cup cream
2 tsp green peppercorns, crushed
1 tbsp corn starch
water to make corn starch slurry
salt and pepper
 
Directions
1. Heat butter in a large skillet. Brown fish slightly on both sides until fully cooked, place on plate and keep warm.
2. In a small saucepan, bring wine to a boil for 1 min. Then add cream and peppercorns. Stir constantly until it starts to boil.
3. Mix corn starch with a small amount of water to make a slurry.
4. Drizzle in corn starch slurry as you rapidly stir the sauce. Allow to cook for a minute more until the sauce thickens and the corn starch taste cooks out. Taste and season with salt and pepper.
5. Pour sauce over fish and serve with rice or boiled potatoes.

Sole in Tomato Cups
 
Ingredients
4 large tomatoes
8 small sole fillets
4 oz butter
1 garlic clove, crushed
3 tbsp chopped parsley
1 cup white wine
Lemon slices for garnish
Salt and pepper
 
Directions
1. Cut each tomato in half and scoop out the seeds and central pulp. Sprinkle with salt and lay upside down on a paper towel to drain.
2. Season the fish with salt and pepper and roll them up. Fit one rolled-­up fillet in each tomato half and place in a buttered baking dish. Break 1 oz of butter into small pieces and drop some butter on on each fish.
3. Cover with aluminum foil and bake at 375 degrees F in the oven for 15 min.
4. Melt the remaining butter in a saucepan. Add garlic and saute for 1 min. more. Then add the parsley and wine and let simmer for 2 min. more.
5. Place 2 tomato halves on each warmed dinner plate and spoon a little sauce over each. Garnish with lemon slices. Serve with boiled potatoes for a great meal.

A clean Indian fish dish

Select flaked fish pieces like cod, ling, mackarel, etc. Marinate in chili powder and salt overnight. BBQ them on medium. Prepare a gravy for it and add the fish. Eat with rice after you cook it for 5 min.
