Creamed Spinach
Ingredients
2 10-oz. bags of spinach (large stems removed) or 2 10-oz. packages frozen chopped spinach (thawed)
1/2 cup onion, chopped
2 - 3 cloves garlic, minced
2 tbsp butter
1 cup whipping cream
1/2 tsp freshly ground black pepper
1/4 tsp salt
1/4 tsp ground nutmeg
Directions
1. To prep spinach in a large pot of rapidly boiling salted water cook fresh spinach (if using) for 1 minute. Drain well, squeezing out excess liquid. Pat dry with paper towels. Snip spinach with kitchen shears or use a knife to coarsely chop; set aside. If using frozen spinach drain well, squeezing out excess liquid.
2. In a large skillet, saute onion and garlic in hot butter for about 5 min. being careful not to burn them.
3. Stir in cream, pepper, salt, and nutmeg. Bring onion mixture to a boil; cook, uncovered, until cream begins to thicken. Add spinach. Simmer, uncovered, for about 2 min. or until thickened. Season to taste with additional salt and pepper.
