Mango Pudding
Ingredients
4 cups sliced mangoes
1 1/2 cups sugar
1/2 tsp cinnamon
1/4 tsp allspice
1 cup unsifted flour
1 tsp baking soda
1 tsp salt
3/4 cup milk
1/2 cup melted butter
1 pt vanilla ice cream
Directions
1.Preheat oven to 350 degrees.
2. Combine mangoes, 1/2 cup of the sugar, cinnamon and allspice. Pour into an 8" x 8" x 2" oven glass baking dish.
3. Combine the remaining 1 cup sugar, flour, soda, salt, milk, and butter. Stir until the mixture is just smooth. Pour over mango mixture.
4. Bake for 45 minutes or until golden brown.
5. Serve warm topped with ice cream.
