Cold Lobster with Green Tartar Sauce
Ingredients
Cold (precooked) lobster
Sauce:
1 small bunch of fresh parsley
1 cup mayonnaise
2 tsp capers, chopped
1 tbsp celery, finely chopped
1 tbsp chives, chopped
1 boiled egg (optional), chopped
salt and pepper
Directions
1. Rinse the parsley and chop very finely. Dampen a corner of a clean dish cloth with water and place parsley in that corner. Squeeze out the juice into the mayonnaise.
2. Add remaining ingredients to the mayonnaise and mix well.
3. Serve as an accompaniment with the lobster meat.
