Mexican Beef Casserole
Ingredients
1 lb beef, cut in strips
1 cup zucchini, diced
1/2 cup onion, cut in 1/4 rings
1/2 cup green pepper, diced
1 cup tomatoes, diced
1 cup red wine
1/2 cup chili sauce
2 cloves garlic, pressed
1/2 cup sunflower oil
1/2 cup grated mozzarella
1 small 14 oz can chili beans (kidney or your bean of choice)
Salt and pepper to taste
Directions
1. Add sunflower oil to a large pan and brown meat slightly on high heat. Remove from pan and put in buttered baking pan.
2. Saute zucchini, onions and peppers in separate batches adding oil as needed. After each batch is softened add them to the baking dish.
3. Add in diced tomatoes, wine, chili sauce garlic and beans. Bake covered for 15 min in 350 degrees oven until meat gets tender. Top with cheese and place back into the oven until cheese is melted.
