Light and Easy Chicken Basil Noodles
Ingredients
2 tsp olive or vegetable oil
1 medium onion, finely chopped (1/2 cup)
1 clove garlic, finely chopped
3 medium tomatoes, seeded and chopped (2 1/4 cups)
2 cups cooked chicken or turkey breast, cubed
1/4 cup fresh basil, chopped
2 cups uncooked cholesterol-free noodles (4 oz)
1/2 tsp salt
Directions
1. Heat oil in 10-inch non-stick skillet over medium - high heat. Cook onion and garlic in oil, stirring occasionally, until onion is tender.
2. Stir in remaining ingredients except noodles and reduce heat to medium. Cover and cook about 5 min., stirring frequently, until mixture is hot and tomatoes are soft.
3. Meanwhile, cook and drain noodles as directed on package. Serve chicken mixture over noodles.
