Curry Delight
A fantastic curry that just spills over with delicious Indian flavors. Easy to make and very satisfying, the dish can win over some of the haters of its more spicy counterparts.
Ingredients
Curry:
2 lbs lean ground beef
1 can (16 oz) can diced tomatoes, undrained
1 cup regular rice, uncooked
1 cup onion (1 large), chopped
1 1/4 cups apples, cored and chopped
2 tsp beef bouillon
2 tbsp coconut (optional)
2 tbsp raisins
1 tbsp chutney, chopped
1 1/2 tbsp curry powder
1 1/2 tsp salt
2 1/2 cups water
Garnish:
Chopped toasted peanuts
Directions
1. Cook and stir the meat and onion in a Dutch oven until the meat is brown. Drain off the excess fat.
2. Stir in the tomatoes (juice and all). Try to break them up a bit after you add them. Add in the remaining ingredients except for the peanuts.
3. Option 1: To cook in a dutch oven: Heat the mixture to boiling. Then reduce the heat and simmer, covered. Stir occasionally until the rice is tender, about 30 to 45 min. (a small amount of water can be added if necessary).
Option 2: To cook in the oven: Turn the mixture into an ungreased 3-quart casserole. Cover and bake at 350 degrees F, stirring occasionally, until the rice is tender, about 45 to 55 min.
4. Garnish with the chopped peanuts just before serving.
