Chili Chicken
Ingredients
4 boneless skinless chicken breast halves (roughly about 1 lb)
1 can (14 1/2 oz) italian stewed tomatoes
1 can (15 oz) chili with beans
4 slices cheddar or American cheese
Directions
1. Trim any excess fat from chicken breasts in an ungreased 11" x 7" x 2" baking dish.
2. Top with tomatoes. Bake uncovered, in a pre-heated oven (350 degrees) for 50 min.
3. Spoon chili over each chicken breast, re-cover, return to oven and bake 10 more min.
4. Top with cheese and return to the oven for 3 - 4 min. or until cheese is melted.
