Beef and Broccoli with Garlic Sauce
Ingredients
1/2 lb beef boneless sirloin or round steak
1 lb broccoli, cut into flowerets and 1 1/2" pieces (about 4 cups)
1 (8 oz) can sliced bamboo shoots, drained
2 cups hot cooked rice
1/4 cup reduced-sodium chicken broth
2 tbsp brown bean paste
1 tbsp finely-chopped garlic (6 cloves)
1 tsp corn starch
1 tsp soy sauce
1 tsp sesame oil
1 tsp vegetable oil
1 tsp finely-chopped ginger root
1/4 tsp salt
Dash black pepper
Directions
1. Trim fat from the beef. Cut beef lengthwise into 2" strips. Then cut strips crosswise into 1/8" slices. Toss the beef with salt and pepper.
2. Place broccoli into boiling water. Cook for 2 min. or until al dente. Immediately shock with cold water and drain well.
3. In a small bowl, mix corn starch and soy sauce. Stir in sesame oil and broth and set aside.
4. Spray non-stick wok or 12" skillet with non-stick cooking spray. Heat over medium-high heat until cooking spray starts to bubble.
5. Add the beef and stirfry about 2 min. or until brown. Remove beef from wok/skillet and allow the pan to cool slightly. Wipe clean and add oil. Rotate the wok/skillet to coat sides with the oil.
6. Heat pan over medium-high heat. Add garlic, ginger root and bean paste. Stirfry 30 seconds. Add bamboo shoots. Then stirfry 20 seconds more. Now stir in the beef and broccoli. Pour in corn starch mixture and cook while stirring for about 30 seconds or until thickened. Serve over rice.
